📍 Location: Moanalei Villas, Samoa
📅 Start Date: Immediate | ⏳ Reports To: General Manager / Owner

Moanalei Villas, a new luxury resort in Samoa, is searching for a visionary Pre-Opening Head Chef to lead the setup and execution of our culinary operations. If you're passionate about world-class cuisine, leadership, and innovation this is your opportunity to shape the culinary identity of a premier Pacific destination.

 

🧭 Key Responsibilities

Pre-Opening Phase:

  • Develop and roll out SOPs and inventory systems to manage costs and quality
  • Implement food safety and hygiene protocols that meet and exceed local standards
  • Recruit, train, and build a high-performing kitchen brigade
  • Source, select, and negotiate with trusted food suppliers
  • Plan kitchen layout and operational workflow for efficiency and excellence
  • Design and develop a standout menu that blends local flavors with global techniques

Post-Opening Operations:

  • Work closely with the front-of-house to deliver seamless dining experiences
  • Foster a positive and collaborative kitchen culture with training and mentorship
  • Monitor food and labor costs, implement effective cost controls
  • Innovate and refine the menu in response to seasonal ingredients and guest feedback
  • Oversee daily operations and ensure top-tier food quality and consistency

Skills/Qualifications Required

  • Passionate, innovative, and committed to excellence
  • Highly organized with the ability to multitask in a high-pressure, evolving environment
  • Proven leadership and training capabilities
  • Strong background in menu development, supplier sourcing, and cost control
  • Mastery in both international and Pacific cuisines
  • Pre-opening experience is essential
  • Min. 2 years as an Executive Sous Chef or Head Chef in luxury resorts or fine dining
