Moanalei Villas is preparing to open its doors as Samoa’s premier luxury resort, and we’re seeking a visionary Pre-Opening Head Chef to lead our culinary journey from the ground up.

🔧 Key Responsibilities
Pre-Opening Phase
- Set up inventory, stock control, and cost-management systems
- Create SOPs for all kitchen and food preparation operations
- Establish food safety and hygiene protocols exceeding local regulations
- Recruit and train the full kitchen team
- Source and negotiate with local and international food suppliers
- Design and set up an efficient kitchen layout
- Develop a high-quality, locally inspired menu blending Pacific and international flavors
- Define the restaurant’s culinary identity in collaboration with ownership
Post-Opening Operations
- Stay current with culinary trends and continuously innovate
- Refine and evolve the menu based on guest feedback and seasonal availability
- Work closely with FOH and management for seamless guest service
- Mentor kitchen staff to ensure a positive and professional team culture
- Monitor food & labor costs; implement smart cost-control measures
- Uphold strict hygiene, food safety, and cleanliness standards
- Oversee daily kitchen operations and maintain food quality and consistency
Skills/Qualifications Required

- Proven ability to manage costs, suppliers, and budgets
- Excellent leadership, training, and team-building skills
- A creative culinary vision with a strong emphasis on local, fresh, and sustainable ingredients
- Expertise in both international and Pacific cuisine
- Hands-on experience in pre-opening projects: setup, staffing, and menu creation
- At least 2 years’ experience as an Executive Sous Chef or Head Chef in a luxury resort or fine-dining environment
